Several years ago, my mom called me and told me that she was looking through the recipes on the Safeway website and came across this recipe for Margarita Cake.  Personally I don’t particularly care margaritas.  I wasn’t a fan of tequila and really the only time I ever enjoyed one was in Texas at a restaurant where it was a frozen margarita mixed with a frozen strawberry daiquiri and man oh man that was amazing.

I am totally getting off topic.  Okay, so I went to store and bought my first bottle of tequila and triple sec ever!  Clearly from the picture you can see that I made this around Christmas time.  I took it over to a friend’s house for a party and it was devoured!  People wanted more and this was all I had!  Needless to say it wasn’t the last time I made this delicious and easy cake!

Recipe
1 (18.25oz) package Orange Cake Mix (or add 1 Tbsp Orange extract to white or yellow cake)
1 (3.4oz) package Instant Vanilla pudding
4 eggs
1/2 cup vegetable oil (or substitute with unsweetened applesauce)
2/3 cup water
1/4 cup lemon juice
1/4 cup Tequila
2 Tbsp Triple Sec liqueur

For Glaze
1 cup confectioners sugar
1 Tbsp Tequila
2 Tbsp Triple Sec liqueur
2 Tbsp lime juice

Directions
1)  Preheat oven to 350F (175C).  Grease and flour a 10 inch Bundt pan.
2)  In a large bowl, combine cake mix, pudding mix, eggs, oil, water, lemon juice, tequila and triple sec.  Beat for 2 minutes.
3)  Pour batter into prepared pan.  Bake in a preheated oven for 45 – 50 minutes, or until a toothpick inserted into center of the cake comes out clean.  Cool in pan for 10 minutes; remove from pan to rack and pour glaze over the cake while still warm.
4)  To make the glaze:  In a small bowl, combine confectioners sugar with 1 Tbsp tequila, 2 Tbsp Triple Sec and 2 Tbsp Lime juice.  Mix until smooth.  If it’s too thin, add a little more confectioners sugar.

I found that the glaze soaked into cake so I dusted it with confectioners sugar and it almost made a little bit of a crust!

This isn’t the healthiest cake in the world but I have found it to be one of the healthier desserts I have ever made!
