My boyfriend came home the other day with this HUGE bag of spinach and asked me, “What can we do with all of this spinach?”
If you didn’t know, you can substitute spinach for anything that you would normally use lettuce for. Cook it down with some cream for a side dish to fish or chicken, add it to an omelette, make a salad, etc.
Today I grabbed that bag and tackled it! I didn’t measure using my typical methods but with my color containers that came with my 21 Day Fix Challenge Pack that I purchased last year. You use the containers to measure out your food so you don’t have to count calories!
SPINACH AND TUNA SALAD
1.5 Green containers packed with Spinach (not loosely, I stuffed it because I was hungry)
1 Red container filled with tuna, packed in water and drained
1 Blue container filled with mashed avocado or 1/4 of a med avocado sliced.
I scoured my fridge for something I could use as a dressing (sorry Ranch you get to take a back seat). I added some dijon mustard to a small bowl with a few dashes of cayenne pepper (depending on how hot you like it) and a tiny bit of water to thin it out like a dressing!
This might be my go to dressing from now on! It was so yummy!
