Officially on the back half of the Ultimate Reset and I couldn’t be happier.  I miss meat.  I miss bread.  I miss pasta.  Granted I have lost some weight but I’m not seeing it yet.  I know that I have goals that I want to reach and I know that I have to go back to exercising self control.  Knowing how much I’ve lost so far being halfway through this has me hopeful for the results in a week and a half!

I will say that my resting heart rate has gone down.  I sleep using the Sleep Cycle app for my alarm.  It tracks my movement while I sleep and when I wake up, I put my finger over my camera lens on my phone and it checks my heart rate.  It was up in the 70s and sometimes 80s when I would wake up but lately it’s been down in the 60s.  I think the stress level going down on my break from school helped a lot.  I’ve been wearing my FitBit religiously and my resting heart rate has an average of 60 and was even down to 58 today.
There isn’t much to say about the fruit plate for breakfast.  While it’s the one constant meal that is exactly the same and I should totally be bored with it, I am loving it.  Phase 3 breakfast is just fruit plates.  While I’ll still be taking pictures of my plates, I probably won’t be talking much about the the meal for obvious reasons unless I add something spur of the moment.

Lunch time!  Quinoa lentil pilaf, cucumber tomato salad and 1/4 of an avocado.  I still fee like I’m eating bits of dirt.  I don’t know what I’m doing wrong because I’ve eaten quinoa before and I know that it doesn’t normally taste like that.  I shorted my tomatoes in the salad because it was looking like too much food.  It was supposed to be 1 cup and I did about 2/3 cup.  I also had to substitute dried basil for fresh because my fresh basil was mushy.

Dinner was hearty veggie miso soup, 1 cup quinoa and 1 cup steamed Swiss Chard w/lemon and EVOO.  I forgot to make more quinoa so I subbed it for brown rice.  I also couldn’t find Swiss Chard at the store so I steamed some kale instead…and it was gross!  Not a fan of steamed kale.  I like it in salad.  I like it baked as a “chip” but steamed like this is just a big scoop of NOPE!

Bring on the rest of the RESET!
